Beat the Heat with This Refreshing Minty Beetroot Hummus Recipe Today!

Beat the summer heat with this cooling and refreshing hummus recipe. The recipe is easy to make and comes together in a jiffy. The hummus is versatile and can be used standalone as a dip with your raw veggies or in sandwiches with avocados and greens. You can make a Mediterranean lunch bowl with quinoa, beet hummus, spinach and feta cheese or even spread it on a tortilla with sliced cucumber, carrots and bean sprouts to make a filling veggie wrap.The possibilities are endless! 

Summer is considered Pitta time and generally Pitta pacifying foods are recommended for this season. This recipe calls for cooked beets and plenty of cilantro and mint. According to Ayurveda, raw beets provoke Pitta and cooked beets pacify it. In addition, cooking the beets is recommended for increasing digestion and absorption. Also, fresh cilantro and mint both are available in plenty in summer and are known for their cooling or pitta pacifying properties.

Minty Beet Hummus 

(makes ~2 cups)

Ingredients

(all organic)

2 medium red beets

1.5 cups garbanzo beans, cooked*

1/3 cup mint leaves

1/3 cup cilantro leaves

1 lemon juiced

1 tbsp olive oil

1 tsp cumin powder

1 tbsp water

Salt to taste

*Soak the Garbanzo beans in water overnight, next day drain the water and add fresh water with turmeric and salt and cook in an instant pot on high pressure for 30 mins.

Method

Cook the beets with two cups of water in an Instant Pot for 10 mins on high pressure and quick release pressure for 10 mins later. Cool the beets and peel of the skin off and cut into 4 large pieces. Add the cooked beets, cooked garbanzo beans, cilantro, mint, lemon juice, olive oil, water, cumin powder and salt to a food processor with an S blade. Blend to a creamy and smooth consistency. Enjoy!
