Chocolate Banana Muffins: A Sweet Vegan and Gluten Free Recipe for You

Vegan, gluten free baking can be so gratifying, with just a little bit more work and the willingness to bring home new ingredients from the store. And in the U.S., you don’t need to make a special trip to the health food store anymore, since conventional stores have become the main distribution channel for gluten free ingredients. 

It’s a skill that many would like to develop but we often can’t find the time. Nowadays, with more people working from home, we have awesome opportunities to practice these new skills!

A healthier form of cupcake

With two different egg replacers, both the mashed banana and the flax seed meal mixed with water, the muffins have a coherent texture and extra moistness. Combining rolled oats and almond meal among the dry ingredients also adds complete protein to the all purpose gluten free flour.

These vegan, gluten-free muffins are a great substitute for cupcakes, so both kids and adults will love them. Chocolate and banana are a great tasting combination, and the muffins are full of potassium and deliciousness! 

Ingredients

  • 1 1/2 tsp baking soda

  • 1/3 cup brown sugar (or a smaller amount of jaggery, agave, or other unprocessed sweetener)

  • 1/2 tsp Himalayan pink salt

  • 1/2 cup gluten-free rolled oats

  • 1/2 cup almond meal

  • 1/3 cup natural cocoa powder

  • 3/4 cup all-purpose gluten-free flour

  • 1 Flax egg (a mixture of 1 tbsp flaxseed meal and 2.5 tbsp water)—these work the same as chicken eggs!

  • 1/2 cup organic milk or organic almond milk (or another vegan milk of choice)

  • 1 1/2 tsp  lemon juice

  • 3/4 cup mashed organic banana

  • 1/4 cup coconut oil or organic ghee (clarified butter)

  • 1 tsp vanilla extract

  • 1/4 cup pure maple syrup

Directions

Mash bananas and add to coconut oil, vanilla extract, maple syrup, lemon juice, milk and flax egg. Mix all the dry ingredients together, and add them to the wet mixture. Mix well, pour into lined muffin tins; bake 20–25 minutes in a 375 degree oven.

It will be a challenge not to eat your first batch of these muffins all in one day, but nobody will judge you if you do!
