Detoxify with This Lentil Barley Soup with Indian Spices

Start the New Year with this lentil barley soup made using a detoxifying blend of the spices cumin, coriander and fennel (CCF). The detoxifying spice mix can be easily prepared by dry roasting equal portions of cumin, coriander and fennel seeds in a cast iron pan. After cooling you can grind the roasted seeds to a fine powder using a coffee grinder.

The resulting potent spice mix CCF is not only good for digestion, but is also known to detoxify and promote weight loss.

Barley is high in fiber, rich in antioxidants and is known to lower blood sugar levels and promote weight loss. Note that barley contains gluten so it is not suitable for those on a gluten-free diet.  

Red lentils are a good source of iron, so they are a good blood builder and liver cleanser. 

Lentil Barley soup

Ingredients:

½ cup red lentils

¼ cup pearled barley

¼ cup carrots, one inch pieces

½ lemon, juiced

½ cup baby spinach leaves

1  tsp cumin seeds

½ tsp coriander seeds

½ tsp fennel seeds

¼ tsp turmeric

½ tsp grated fresh ginger

1 tbsp ghee

2 cups of water

Himalayan Salt and black pepper to taste

A few sprigs of cilantro to garnish

Method: 

Prepare the detoxifying spice mix by dry roasting the ½ tsp cumin, ½ coriander tsp and ½ tsp fennel seeds in a cast iron pan for a few mins. Cool and grind in a coffee grinder until finely powdered. Keep aside.

Next wash and rinse the red lentils 2-3 times with water. In a thick bottomed saucepan add ghee. When hot add the cumin seeds, turmeric powder and fresh ginger. Saute for 30 seconds till cumin seeds are brown. Next add the lentils, barley, water and salt to it. Cover the pot and cook on medium heat for 15-20 mins. Add the freshly ground detoxifying spice mix and black pepper. Add spinach and lemon juice at the very end. Garnish with a few sprigs of cilantro and enjoy.
